A simple how-to for our Sunny Spring Cupcake Kit, resulting in vivid yellow cupcakes, richly frosted with Sunshine Yellow Buttercream, and dazzled up with a dose of Field Day.
You need (makes 2 dozen):
For the cupcakes:
1 box King Arthur Golden Cake Mix
1 packet Plant-Based Food Colors, Yellow
1 stick softened butter (8 TBSP)
1/3 cup vegetable oil
4 eggs
1 cup milk
For the buttercream:
5 tbsp cold butter
5 tbsp water
To finish:

Steps:
Pour cake mix into a large bowl. Add packet of yellow food coloring, and mix well. Continue to follow directions on the back of box to make and bake your cupcakes.
Tip: After gently mixing in all ingredients, allow batter to rest for 2 minutes, then briefly stir once more. This will allow your yellow plant-based food color to fully “bloom.” (Not a spring pun, that’s just what it’s called.)
While the cupcakes cool, make the buttercream frosting according to the directions on the box. Use less water for stiffer frosting, and a little more for more swooshable frosting.
When your sprinkles have fully cooled (patience), frost and decorate.
