A frozen treat that truly checks the box on “healthy snack,” this Lisa Frank-inspired yogurt bark is low-sugar, high-protein, and a kid’s dream come true.
You’ll need:
For the spots:
1/4 cup Red Melting Morsels
1/4 cup Blue Melting Morsels
1/4 cup Yellow Melting Morsels
1/4 cup Pink Melting Morsels
For the bark(pick any):
Unsweetened yogurt / non-dairy yogurt, (we like Cocojune)
*Less thick yogurts are easier to spread, but the thicker ones tend to be higher in protein.
1 baking sheet
4 piping bags or baggies
4 microwavable bowls
parchment paper
scissors & spoons
Prepare your sheet pan by lining with parchment. Place morsels in small, microwaveable bowls.
Starting with the first color (your choice), microwave morsels in 30-45 second increments, stirring in between, until fully melted.
Carefully pour warm melted morsels into piping bag or plastic baggie. Snip a very small tip of the baggie off. Pipe small half circles all over parchment, then go back and pipe the other side of the circle. Your cheetah spots will look most realistic if the ends of each half circle do not touch.
Repeat with color 2.
With colors 3 and 4, pipe dot in the middle of each circle, completing the spot.
Place in freezer for 5 min to set.
Remove from freezer. Carefully pour yogurt over the spots. Use a spatula to very gently spread yogurt to the edges of your parchment.
Return to freezer for 1hr. Break into pieces, and snack away!
